A new year, a new outlook, No diet just changing habits

Changed my old Oat milk in a new version no sugar but still sweet.

Improved oat milk

1 cup rolled oats
6 cups water

Put both in a glass bowl, cover and let sit over night. next day blend it in the blender and strain out the pulp. Stir the pulp to get all the liquid out. Save for next project below. If you prefer no extra sediment in it then strain through a coffee filter after regular straining. We like the consistency and don't mind stirring it before we pour into a glass. Then add these:

1 teaspoon vanilla extract
1/4 cup honey

Stir well and serve cold

Doggy treat from reserved oat pulp

1 recipe oat pulp
1 egg
1 large shredded wheat (cerial), crushed
1/4 cup flour
1 rounded teaspoon beef base (from a jar)
1/3 teaspoon garlic powder (not salt)

mix together and spread on a slightly greased cookie sheet like you see here

Bake at 350 degrees for 25 minutes. Within minutes my husband came running thinking I was making steaks. Take out and cut with kitchen shears into dog size biscuits and put back into the oven until hard as a rock. if they are about dry because you did a great job flattening them out just put back in the turned off oven to dry the rest of the way. If not then usually another 30  minutes on 325 degrees. Then turn off the oven and let them cool inside the oven and put into a container with a tight lid

The picture's above were made today.

HOMEMADE CREOLE SEASONING and low salt seasoning

This was experimented with until it was about the same as Zatarain's Creole Seasoning

5 Tbsp paprika
4 Tbsp salt
4 Tbsp garlic powder (not salt)
2 Tbsp onion powder (not salt)
2 Tbsp ground black pepper
2 Tbsp cayenne pepper
2 Tbsp ground dried oregano
2 Tbsp ground dried thyme
Place all spices in bowl and blend together. Store in airtight glass jar in a cool place in pantry. It will last indefinitely if kept in sealed jar

For a low salt seasoning either cut the salt to 1 teaspoon or cut it out all together.

Best nut loaf (a very old Better homes and gardens recipe) revised

I started cooking with a cook book my mother had received from her mother, a better homes and gardens cook book. There is no date on it but by the pictures I would say pre- 1950's. I remember her making this bread on special occasions. I revamped it and pulled the sugar out. It is in baking as I fill this out, so a picture will be added soon. Unhealthy version as it was written is under the directions.
Cook time: 1 Hr 30 Min  Prep time: 10 Min  Serves: 1 large loaf bread

BEAT TOGETHER
1 c milk (i used almond milk)
1/2 c unsweetened apple sauce
1/2 tsp almond extract
1 tsp salt
1 large egg
4 tsp baking powder
2 Tbsp oil or melted butter (I used butter)
THEN MIX IN
3 c flour (i used light spelt)
WHEN ALL IS MIXED WELL, FOLD IN
3/4 c chopped walnuts or pecans (i used pecans)
Preheat the oven to 350 degrees Spray and flour a large bread pan. Fold the dough into the pan and smooth out. Cook in the oven for 1 1/2 hours or until knife comes out clean.

Original unhealthy version as it was in the book
Omit the apple sauce and in its place put 1 cup sugar
increase milk from 1 cup to 1 1/2 cups
switch from spelt flour to regular flour.
take out the almond extract
