Easy Pumpkin Recipes
Five and three/forths cups of Pumpkin will make you everything below
Pumpkin Parfait
1 cup pumpkin puree
1 cup vanilla yogurt
Put in a parfait cup alternating with granola
Sugar and Spice pumpkin seeds
Pumpkin seeds
melted butter
cinnamon
nut meg
sugar
alspice
Toss seeds with spices and butter and lay on a baking sish and bake at 300 for 30 minutes watching to see it doesn't burn
Pumpkin spice pancakes
1/2 cup canned pumpkin
1/2 teaspoon pumpkin pie spice
Add the pumpkin and spice to any pancake mix and cook as usual.
Pumpkin Mousse
1 cup pumpkin
1 tablespoon pumpkin pie spice
2 cups whipped cream or cool whip
Can also be used to top pie or as whipped cream for hot chocolate
Pumpkin Hummus
2 cups pumpkin puree
2 tablespoons tahini
1 clove garlic diced
1 teaspoon olive oil
1/2 teaspoon ground Cumin
salt to taste
Process and serve with crackers
Pumpkin Snowballs
1 cup oatmeal
1/2 teaspoon pumpkin pie spice
3 tablespoons pumpkin puree
1/4 cup brown sugar
1/4 cup raisins
Mix in a bowl and roll into balls and roll in powdered sugar
or you can roll them in cinnamon sugar
Pumpkin Pudding Pie
1 graham cracker crust
1 package vanilla instant pudding or cheese cake pudding
1/2 cup pumpkin puree
1/2 cup milk
1 small package cool whip
1 teaspoon pumpkin pie spice
Mix it all together and pour into the crust and chill 2-4 hours and serve.
Pumpkin Cream cheese
1 (8oz) package cream cheese
1/4 cup pumpkin puree
1 teaspoon pumpkin pie spice
serve on toast or bagels
