Sit, listen to the wind, birds and trees. Allow the beauty and chaos that is nature to enter and propel you through this time we call life. Breath in the smells of an open fire place and a camp fire. Know the difference they have on you and your surroundings. Give with an open heart and mind. Know that there are richer and poorer. But never measure those two thoughts by the amount of money one has. For richness is how you live and give of yourself, not what you have.

For those unable to get a turkey this year
Roast Rabbit with Potato Stuffing
2 cups mashed potatoes
2Tbls butter
1 tsp salt
1/2 tsp pepper
1 1/2 tsp thyme or sage
1 cup chopped celery
or
1 1/2 tsp celery salt(if you use omit salt in recipe)
Bacon or salt pork
1 Whole Rabbit
This recipe can be used with a dutch oven and camp fire
Just cover dutch oven over with hot coals and allow a little more c ooking time.
Make stuffing by combining all ingredients except bacon or salt pork and rabbit.
Wash dressed rabbit, fill with stuffing and skewer closed
Place in baking pan, fold legs under body and skewer to keep positioned.
Stip back of rabbit with bacon or salt pork to keep from drying out.
Roast at 400* for 10 min.then pour on 1 to 2 cups of hot water, cook 35 to 45 min.
Shortly before time is up, remove bacon or salt pork so it can brown up nicely.
Serves 4
