Sit, listen to the wind, birds and trees. Allow the beauty and chaos that is nature to enter and propel you through this time we call life. Breath in the smells of an open fire place and a camp fire. Know the difference they have on you and your surroundings. Give with an open heart and mind. Know that there are richer and poorer. But never measure those two thoughts by the amount of money one has. For richness is how you live and give of yourself, not what you have.

Chayote Squash Dinner
Chayote Squash Dinner for two
2 Chayote squash, split with seed removed.
1/4 pound breakfast sausage or Italian sausage
1 small onion
1 teaspoon garlic
1/4 cup Parmesan cheese
1/4 cup shredded mozzarella cheese
Bake the squash with a little butter until soft about 30 minutes. Scoup out 1/2 of the center and chop up and set aside.
In a pan fry the sausage, onion and garlic together until the sausage is done. add to the chopped squash and fold in the cheeses. stuff into the 4 shells and bake covered for 25 minutes.
Serve with this side dish for a very healthy meal and very cheap to make.
Stir fry Squash
1 summer squash
1 zucchini squash
1 tablespoon butter
Kickin chicken seasoning
Cut each squash in half side ways and cut each half in half and each one of then into thirds length ways. making them look like sticks.
Stir fry in butter with seasoning until tender crisp about 5 minutes.
