Aurora's Chicken Pepperoni


Today the land is still, as the freezing rains fall across the snow, making travel stand still while the road men try to fight mother nature. How stupid is that, no one fights mother nature and wins. Still they are trying.

Raptor treads lightly as she breaks through the semi solid top layer of ice as she makes her way to her morning potty area. It was hard to get her to come in since (she is a husky) nothing spells heaven to her more than snow and ice. Luckily breakfast persuaded her to at least check out her options, and she returned in wet and cold. After some shaking, and two bath towels, she now lays asleep all curled up beside me as I type.

As with most days of heavy rain or snow I awoke with a headache so I won't be on line long. Tonight is the perfect time to curl up with a funny movie and what could be better than  watching "Seams like old times" and eating Aurora's Chicken Pepperoni. Yum! Since I couldn't find a recipe on line this is the one I created a long while back and my family loves. I hope you will try it.
 
Aurora's Chicken Pepperoni

Cook time: 25 Min  Prep time: 20 Min  Serves: 4

1 pkg Tyson thin sliced fresh chicken breast (4 breasts 17.6 oz pk)
1 large egg
1/2 cup milk
1-1 1/2 cup bread crumbs
1 jar(s) regular sized Ragu robusto 6 cheese spaghetti sauce
1 -2 1/2 ounce sliced pizza pepperoni (more for hotter less for milder)
1 onion diced and sauteed.
Parmesan cheese
In a bowl beat egg and milk together. Set a side. In a bowl place bread crumbs. Dredge chicken breast through the egg/milk mixture and then into the bread crumbs. And put in a frying pan with a little oil and cook till done. set a side. saute onions in leftover oil in frying pan.
 In a oblong baking dish put a small layer of spaghetti sauce in bottom. Add the chicken in a layer across bottom.
 Take the sauteed onions and add to the jar of spaghetti sauce that you just took a little out of and shake to distribute onions. Spicier: If you want spicier chicken pepperoni then you would put a layer of pepperoni over chicken. side by side over entire dish. Add the remainder of the sauce and add another layer of pepperoni again over entire dish and top with Parmesan cheese Milder: If you want it milder. Add the remainder of the sauce and a layer of pepperoni over entire dish and top with Parmesan cheese.
4. Bake at 350 degrees for 25-30 minutes. serve with noodles, garlic bread and a side salad
5. For crowd size meal 12 chicken planks 2 jars of spaghetti sauce the same spices doubled 16 oz package Kroger Private selection Gemelli 1/2 cup water Pepperoni Parmesan cheese In a bag with the 12 pieces of chicken planks Pour enough flavored flour to coat chicken and shake. Spray a 9x12 baking dish with a spray oil and add to it one bottle of spaghetti sauce mixed with the seasoning above and 1/2 cup water. to that add the Gemelli and stir well. top with 1/2 slices pizza pepperoni and set aside. In a foil lined baking sheet place each of the 12 chicken plants in a single layer and top with two slices pepperoni each and bake for 25 minutes or until chicken is done (350). Lay cooked chicken on top of uncooked pasta and cover with the last bottle of spaghetti sauce with the spices in it also. Top with 1 cup nice grated or slivered Parmesan cheese. Coat foil with a little spray and cover well. At this point you can refrigerate the dish overnight or put in the oven. Bake at 350 degrees for 45 minutes. let sit 5 minutes and uncover and serve. Your noodles will be fully cooked and the chicken will break apart easily
