- 1 c brown sugar, firmly packed
- 2 Tbsp pecans,ground.
- 1 Tbsp cornstarch
- 1 Tbsp bourbon may use rum

- 1 egg white,room temp
- pinch of cream of tartar
- pinch of salt
- 2 c pecans, halved

Directions
1. Pre-heat oven to 350...Place brown suger,ground pecans and cornstarch in a bowl and mix well. Add bourbon or rum and blend till smooth. 2. Beat egg white with cream of tartar and salt.untill it holds stiff peaks... stirin 1/3 of egg whites into sugar mixture and blend well...Add remaining egg whites (It will become more liquid)...Add pecan halves,stirring gently to coat nuts...
3. Butter a baking sheet and arrange nuts (Top up.)on buttered baking sheet.(Keep them separated batter will puff up.).. Bake for 12 minutes. Then let cool befor serving

Honey Cashews
- 4 1/2 c raw cashews or other nuts
- 2 Tbsp vegetable oil
- 1/2 c light brown sugar, packed

- 1 Tbsp water
- 2 Tbsp good honey
- 1 Tbsp kosher salt

Directions
1. Heat oven to 350^. place oven rack in the middle. Line a baking sheet with parchment paper. --- In a large bowl, toss cashews with oil until well coated; set aside. 2. Combine brown sugar, water, and honey in a small saucepan,place over medium-high heat, and bring to a boil. Reduce heat to low and cook until mixture has thickened slightly( about 5 minutes). Drizzle over cashews and stir to coat.
3. Place nuts to the baking sheet and spread in a single layer. Bake until golden brown, stirring every 10 minutes, for about 20-25 minutes.
4. Sprinkle salt over nuts and stir to coat. Let cool completely on the baking sheet and break up any large pieces before serving.

Candied Walnuts
- 1 lb walnut halves
- 1 c white sugar
- 2 tsp cinnamon powder

- 1/4 tsp kosher salt
- 6 Tbsp milk
- 1 tsp pure vanilla extract

Directions
1. Preheat oven to 350 degrees F (175 degrees C). Spread nuts in a single layer over a baking sheet. Roast for approximately 8 to 10 minutes, or until the nuts start to turn brown and the smell of roasting nuts fills the kitchen. 2. Stir together sugar, cinnamon, salt, and milk in a medium saucepan. Cook over medium-high heat for 8 minutes, or until the mixture reaches the soft ball stage of 236 degrees F (113 degrees C). Remove from heat, and stir in vanilla immediately.
3. Add walnuts to sugar syrup, and stir to coat well. Spoon nuts onto waxed paper, and immediately separate nuts with a fork. Cool, and store in airtight containers.

Diamonds Spiced Walnuts
- 1 c sugar
- 1/4 tsp salt
- 2 tsp cinnamon
- 1/2 tsp nutmeg

- 1/2 tsp cloves
- 1/2 c water
- 2 c walnuts, halves or large peices
|
Directions
1. Boil sugar, salt, cinnamon, nutmeg, cloves and water to 235 degrees F on candy thermometer (soft ball stage). 2. Remove from heat and add walnuts. Stir until creamy.
3. Turn out on waxed paper; separate walnuts, using two forks

Union Square Cafe Bar nuts
- 2 c mixed nuts
- 1 Tbsp butter
- 2 Tbsp fresh rosemary chopped

- 1/2 tsp cayenne pepper
- 2 tsp brown sugar
- 1 tsp kosher salt (if using salted nuts you can omit this)

Directions
1. Pre heat oven to 350 degrees. 2. Line a baking sheet with aluminum foil. Toast nuts on baking sheet until warm, lightly golden and fragrant, about 5 min.
3. In a small sauce pan on med. to low heat combine butter, rosemary, cayenne pepper and brown sugar and stir until melted and thoroughly combine.
4. In a large bowl toss warm nuts with hot butter mixture. Make sure to do this right away while everything is hot or it wont stick properly. Season with salt if using and toss to coat thoroughly.
5. Serve warm.

Spicy Hot Nuts
- 4 c dry rosted peanuts
- 2 teaspoons cayenne pepper

- 3 to 4 teaspoons oil

Directions
1. On medium heat, heat the oil in a skillet. Once heated stir in the cayenne pepper. Now add peanuts and stir. Continue stirring non stop for about 2 to 3 minutes. Make sure they are all coated and heated. Remove from heat. 2. You can serve these after completely cooled or when they are still warm.

Holiday Spiced Nuts
- 2 cups walnut halves
- 1 cup peeled hazelnuts
- 1 cup whole unsalted cashews
- 1 cup whole pecan halves
- 3 tablespoons butter
- 1 teaspoon ground anise
- 1 teaspoon ground cinnamon
- 1 teaspoon coarse black pepper
- 1/2 teaspoon freshly grated nutmeg, eyeball it
- 1 cup smoked almonds (recommended: Diamond Smokehouse almonds)
Heat a large skillet and cook nuts over moderate heat 7 to 8 minutes until golden and well toasted – your nose will know when they are done. Transfer nuts to a plate and return pan to stove top. Add butter to the pan in small pieces. Melt butter and spice it with anise, cinnamon, pepper and nutmeg. Let butter infuse a minute then pour over nuts. Turn off heat. Add smoked nuts to the skillet and turn to combine evenly with butter.
