Easy Baked Beans and Pork Roast with Mashed Cauliflower

Have been wishing the winter's moan was over and summer was here so I cooked up a summery dinner.


Roast pork and beans

1 small boneless pork roast
1 can(s) northern beans, lightly drained
1 can(s) chili beans, lightly drained
1/3 c brown sugar, firmly packed
1.4 c molasses
1 tsp diced garlic from a jar
1 small onion, diced
any pork rub or seasoning. I used grill mates pork rub that i found at family dollar for $2.
Preheat oven to 325 degrees. Rub the roast with the rub and put fat side down in a covered baking dish in the oven. In another baking dish put the beans, molasses, onion, garlic and sugar together and place in oven. NOTE: I didn't combine the first 1 1/2 hours so the grease wouldn't be in the beans.
After an hour and a half remove the pork roast and place fat side up into the beans dish and continue baking for another 1 1/2 hours decreasing the heat to 300 degrees.
I served with mashed cauliflower and deviled eggs 



Mashed Cauliflower
 
1 large head cauliflower
sour cream
garlic powder
butter, softened

Cut the cauliflower unto segments and boil in water until done but not mushy.
Drain and mash with butter, sour cream, and lightly sprinkle garlic powder over top and stir well, Serve hot.
