Bring a lil Jamaica home mon!



Set up your lawn chairs (Inside since it's winter here).........make a pitcher of your favorite rum drink, put on a Jamacian Music,  taste these little ditties and close your eyes. Feel the tropics breeze over you. Now relax. Yule will come whether you worry or not.

Jamacian Glazed Bananas

3 firm bananas
3 tbsp butter
3 tbsp brown sugar
1/4 cup orange juice
1/4 cup spiced dark rum
1 tsp ground cinnamon
1/4 tsp ground allspice
vanilla ice cream

Cut bananas in half lengthwise and then into 1 inch pieces; set
aside.
In a large skillet over medium-high heat, cook butter and brown sugar
until bubbly. Remove pan from stove -- be careful not to add rum near
flame. Stir in orange juice, rum, cinnamon, allspice, and bananas.
Saute until glazed but still firm, about 1 minute.
Serve immediately over ice cream.
Note: Can substitute light or dark rum for spiced rum; or omit rum
and increase orange juice to 1/2 cup.



Jamacian Beef Patties
 
This recipe comes courtesy of a Jamaican Friend. I have tried them and they are all great and easy to make.

3 lbs. ground beef
2 grated onions
1 stick celery
1/2 green pepper
Pinch of salt
Pinch of black pepper
1 tsp. thyme
1 Scotch Bonnet Pepper

PASTRY:
4 1/2 cup flour
1/2 cup butter
1/2 cup shortening
1/2-1/4 cup water
1 pinch salt

TOPPING:
2 eggs

Brown ground beef, add rest of ingredients.

Place salt, flour, butter and shortening in bowl. Blend ingredients
finely. Add water to dough.
Use a rolling pin to flatten the dough. Cut out dough with glass cup.

Place small amount of ground beef on one side of dough. Cover with
other side and seal.
Beat two eggs brush on patties.
Bake at 350 degrees.

Jamacian Jungle Bread

1 1/2 cup all-purpose flour
1 cup 3-minute brand quick oats
1/2 cup granulated sugar
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
1/2 cup flaked coconut
1/2 cup toasted nuts, chopped
1 cup mashed bananas (about 3 med.)
1 (8 oz.) can crushed pineapple, un-drained
1/4 c. vegetable oil
2 eggs
GLAZE:
1/2 cup powdered sugar
1 tbsp. butter
1/2 tsp. coconut or vanilla extract
1 to 2 tsp. milk

In large bowl, stir together first 9 ingredients.
In medium bowl, mix bananas, pineapple, oil and eggs; add all at once
to oat mixture. Stir just until liquid is absorbed and mixture is
thoroughly moistened (do not over mix).
Pour into greased 9 x 5 x 3 inch loaf pan. Bake at 350 degrees for 50
minutes.
Cool in pan 5 minutes.
Then remove from pan and cool completely.
Makes 1 loaf.
GLAZE:
Mix together. Drizzle over Jamaican Jungle Bread.



After all is said and done you can get back to your old routine tomorrow, working out like a dog!
