A famous vintage cookie ~ No Bake Cookie



I remember no bake cookies growing up. It was the only cookie my mother actually made from scratch. Everything else was bought either ready made or from the diary isle. My mom alway added walnuts and raisins. I prefer either plain like these are or with dried cherries. When you add the cherries it makes a great "Arthritis Relief Cookie".

2 cups sugar
1 stick butter
3 tablespoons baking chocolate
1/2 teaspoon salt

Place in a sauce pan over medium heat, stirring often until it comes to a boil. Boil 1 minute at a full rolling boil. Remove from heat, stir in

1/2 cup peanut butter
1 teaspoon Vanilla

Once that is smooth add

3 cups rolled oats (quick cook)

Stir, then drop teaspoonfuls onto wax paper to set. This is where you would add raisins, nuts, crasins or dried cherries. also dried blueberries are quite good.
